By the shores of lake Volvi, 60 km from the city of Thessaloniki in Northern Greece, lies the Volvi Estate wild olive farm.

At 4,000,000 sq.m. (400 ha) and with around 70,000 olive trees, it is the single biggest private wild olive tree farm in the country. The Byzantine olive mill standing in its middle has been overseeing the olive trees and their gift of wild and extra virgin olive oil (EVOO) since medieval times.

WILD OLIVE TREES

Wild olive trees (Olea Europaea sylvestris) have been growing on the estate for centuries, unaffected by any human intervention, just with the protection of the mild microclimate of the lake.

Wild olives grow and bear fruits completely unaided, in the most natural of processes, relying only on the sun and the rain. Today there are around 90,000 wild olive trees on the estate together with approximately 10,000 tame olive trees (Olea Europaea), and produce respectively wild olive oil, one of Greek nature’s superfoods, and extra virgin olive oil (EVOO).

THE PROCESS

First cold pressed extraction is used for Volvi Estate wild olive oil, which ensures the high quality and bio-active value of the product. This is of outmost importance as the wild olive trees grow within a natural preservation park and Natura area. To avoid hurting the olives, as they are small and fragile, the fruit is collected solely by hands or specialised manual rakes. It istakentotheorganicallycertifiedmillonthesameday, where the product is extracted and bottled in less than 24 hours from harvest.

Our wild olive trees have been growing free during the centuries, protected by the lake’s mildmicro-climate and the nearby mountain. They bear fruit solely with the blessing of the sun and rain. Their species does not needspraying as they don’t attract insects; the sole human intervention is pruning, to allow for more air and light.

The location of the estate within a Natura and Ramsar area guarantees quality, it’s size guarantees adequate quantity of production, year in year out. Wild olive oil is a difficult product to ensure, as the ratio of oil to fruit is much lower than for occulated trees that give regular olive oil (1 lt of oil from 20kgs of fruit, compared to 1lt of oil to an average of 4 kilos of fruit)
Efforts are being made to increase this ratio, without compromising the natural procedure, through the EU-funded study that has been approved for the Estate through the Prefecture of Central Makedonia.

[ HISTORY ]

TZIMILARION

This is the name of the middle ages (Byzantine) olive mill, in the center of the estate, by the base of the hill.

Despite its half-ruined state, it still remains a fine specimen of Byzantine architecture. Built in 1324 AD, it is one of the oldest olive mills in the Mediterranean, having spent almost 700 years in the company of the wild olive trees and the waters of lakeVolvi.
